Mediterranean Egg Bites
Ingredients
- 6 whole eggs
- 6 egg whites
- 1/4 cup milk
- 1/4 cup red onion, diced
- 1/4 cup sundried tomatoes, diced
- 2 oz feta cheese
- 2 cups fresh spinach
- 1/2 tsp garlic powder
- 1/2 tsp fresh dill, chopped
- salt & pepper, optional
Directions
- Preheat oven to 350F (175C) and prepare a silicone egg bite mold or muffin tin with non-stick cooking spray.
- In a bowl, whisk together eggs and milk until well beaten.
- Stir in the feta cheese, sun-dried tomatoes, spinach, fresh herbs, salt, and pepper, combining everything thoroughly.
- Pour the mixture into the prepared mold or muffin tin, filling each compartment about 3/4 of the way.
- Place the mold or tin in the preheated oven and bake for approximately 20–25 minutes, or until the eggs are fully set.
- Once done, remove the egg bites from the oven and allow them to cool for a few minutes.
- Carefully remove the bites from the mold or tin and serve them warm as a mouthwatering breakfast or snack option.
